It's National Cookie Day, and one of my favorite holiday traditions is baking cookies with my kids. Every year, my sugar 'n spice cookies are a hit. The dough is easy to handle, so it's a great recipe for kids who want to cut cookies into all sorts of fun shapes and sizes.

As a single working mom of three, meal prep and these recipes have become an essential part of feeding my family. On the days I fly to DC, I get up at 5:30 am to prepare dinner for the kids to enjoy that night. It's always a slow cooker recipe or something that can sit in the fridge until the kids cook it. Favorites include baked potato bar and pepperoncini beef.
I know so many others are juggling responsibilities and just trying to get a hot meal served. Hopefully these recipes can help—while also supporting our campaign for the U.S. Senate!
